June and July in Paso Robles have been relatively cool (for Paso). At Red Cedar, we finished canopy adjustments and the grapes are growing, but are still green. The crop looks good, especially Cabernet, and the vines are healthy. The vines are at the stage where throttle back on canopy growth to put their energy into the fruit. Veraison should start within the next few weeks, when we’ll make our final crop adjustments.
At the winery we are stabilizing the Vineyard Malbec, Cabernet, Syrah, Casa De Arcilla, and Late Harvest Petite Sirah. These will be bottled in August and then age in bottle for six months.
We will move to Courtside’s San Luis Obispo facility during the last two weeks of August. The winery has more options for small tank and small lot fermentations.
